Viré-Clessé AOC WHITE Grande Réserve 2008 75 cl bottle
Terroir:
100% Chardonnay, this cuvée coming from the hills at an altitude of 200 metres on average grows on soils of limestone and marl of the middle Jurassic period.
Vinification - Maturation:
Traditional vinification in stainless steel tanks, matured on its lees. Bottled in the spring of 2008, after its malolactic fermentation.
Tasting:
Yellow hue with gold-green tints, brilliant and crystal clear. A fresh nose, typical of Chardonnay, appetising with mineral and floral notes. A frank, sharp palate which evolves towards roundness. Fresh fruit and citrus flavours in the mouth. A pure, pefectly aromatic finish.
Food and wine match:
Serve fresh, around 50°F, before your meal, with a salmon and asparagus-tip pie or pan-fried scallops.
The little extra:
La grande Réserve remains the emblematic cuvée of the Cellars and its packaging was given a new look for the 2007 vintage.

Viré-Clessé AOC WHITE Cuvée Spéciale 2008 75 cl bottle
Terroir:
100% Chardonnay, this cuvée comes from the top of the slopes facing south-south east towards the Saône River. Soils from Bajocian limestone quarries.
Vinification - Maturation:
Traditional vinification in stainless-steel tanks, carefully matured on fine lees.
Bottled in the spring of 2008, after its malolactic fermentation.Tasting:
Yellow hue with gold tints, brilliant and crystal clear. An intense, fresh nose, typical of the Mâconnais. Hints of citrus fruit and white flowers. A frank, precise palate, balanced by a natural freshness which envelops an irresistible texture. A triumphant finish, full of talent!
Food and wine match:
Serve fresh, around 50°F, with a gratin of crayfish, scallops with citrus fruit à la nage or a pan-fried fillet of scorpion-fish.

Viré-Clessé AOC WHITE Viré d'Or 2005
Terroir:
100% Chardonnay, coming from the best slopes and harvested by hand on limestone and marl soils, this cuvée boasts a maximum yield of 35 hectolitres/hectare.
Vinification - Maturation:
Traditional vinification in oak casks. Matured on fine lees and stirred over a period of six months, and finished off in stainless-steel tanks. Bottled in the spring of 2008.
Tasting:
Yellow hue with gold-straw tints, brilliant. A complex, fleshy nose, possessing exceptional concentration. Hints of brioche and vanilla; the wood which is well integrated attains the heights of perfection. The palate is sappy, rich, with a good deal of fullness. There are flavours of torrefaction, hints of grilled almonds and fresh fruit paste. The finish is fresh and persistent, and this enhances the newest of the "crus" of the Mâconnais.
Food and wine match:
Serve fresh, around 54°F in a decanter, and match it with a filet mignon of veal with cream and chanterelles, haddock roasted with grilled almonds or a matured Epoisses cheese.
